Who Cut The Cheese?

Cheese’s origin is assumed to lie in the practice of transporting milk in bladders made of ruminants’ stomachs, with their inherent supply of rennet. However, there is no conclusive evidence indicating where cheese-making originated.

Ancient Greek mythology credited Aristaeus with the discovery of cheese.

The first factory for the industrial production of cheese opened in Switzerland in 1815.

But it was in the United States where large-scale production first found real success. The Henry Ford of cheese-making was Jesse Williams, a dairy farmer from Rome, New York, who in 1851 started making cheese in an assembly-line fashion using the milk from neighboring farms.

That means we can also credit Mr. Williams with helping us provide the means for ‘locally grown’ cheese since within a few decades of his use of community farmers hundreds of local dairy associations cropped up across the nation.

One such local dairy and cheese house is Farm Country Cheese House in Lakeview, MI.  According to their website:

Farm Country Cheese House broke ground in April, 1983 and began production in July of 1984. From the beginning, the Amish communities in and around Lakeview, Michigan have supplied all of the milk and most of the labor to process the wide variety of cheeses we sell.

A celebrated favorite product they sell, and Carlyle Grill uses in its scratch kitchen recipes, is a classic – Cheddar.
